Baked Brie with Caramelized Onions and Cranberries
This is a simple but elegant appetizer. My favorite time to make it is during the Christmas Season because the cranberries add such a festive look. It’s one of those dishes that you never have any left-overs.
3/4cup finely shopped onions
a pinchsea salt and pepper
2tablespoons rapadura or sucanant (whole cane sugar)
2tablespoons white wine vinegar
1/2teaspoon dried thyme
3tablespoons chopped dried cranberries
1round (8 oz/230 g) brie cheese
3teaspoons minced fresh parsley
In a cast iron pan heat butter or ghee over medium heat; fry onion, salt and pepper, stirring occasionally, until light golden, about 12 minutes.
Sprinkle with whole cane sugar; cook over medium-low heat, stirring occasionally, until golden brown, about 15 minutes.
Stir in vinegar and thyme, cook for 2 minutes. Scrape into bowl; let cool. Stir in cranberries.
Spread onion mixture over cheese. Place on plate and then put plate on baking sheet; bake in 350°F oven until cheese is softened, about 10 minutes. Sprinkle with parsley.
I like to serve baked brie with sourdough crackers or a store bought sourdough baguette.
