Instructions

Steam  beet greens until wilted and squeeze water out.

Steam beets until tender- about 20-30 min. Transfer beets to an ice bath to stop cooking.

In a small bowl whisk together olive oil, vinegar, garlic, spices, salt and pepper to taste, honey and mint. Place fried onions, beets, beet greens in a bowl. Mix in the dressing. Place in a nice bowl and top with Brie or feta cheese.
