In a large pot melt the butter or ghee. Add the onions and sauté for about 5 minutes. Add the celery and carrots and cook while stirring for about 5 minutes. Add the potatoes, garlic, stock, tomatoes, beets and cabbage. Bring to a boil and then put on a simmer for 10 minutes or until the potatoes are soft. Add the rest of the ingredients and cook on low for another 5 minutes. Can be served with a dollop of sour cream on top.
