Melt butter in a large pot on the stove. Add the onions and saute until just starting to go golden. Add the potato, stock/broth and broccoli. Bring to a boil and then drop to a simmer. Simmer till broccoli is soft, about 20 minutes. and the nutmeg, salt and pepper. Using an immersion blender , blend soup in the pot until all the chunks are gone or place soup in food processor (a few batches at a time). Return to pot and add cheese and cream and red pepper. Stir and heat another 5 minutes.
