Brussels Sprouts with Shallots
Sliced Brussels Sprouts with Caramelized Shallots
I know, I know you are thinking, “who likes Brussels Sprouts?” This recipe will turn any Brussels sprouts hater into a lover. When you slice them up and smother them with buttery shallots they won’t even recognize them and next thing you know they want the recipe! Our family now has made this dish a Thanksgiving and Christmas Tradition.
3tablespoons butter or ghee
6shallots, thinly sliced
1teaspoon sea salt
1/2teaspoon freshly ground pepper
2tablespoons apple cider vinegar
3teaspoons whole cane sugar (Rapadura or Sucanant)
1 1/2pounds of Brussels sprout, trimmed and sliced thin
In a cast iron frying pan, melt butter or ghee on medium heat. Add shallots, salt and pepper and sauté until golden (approx. 8 minutes). Add vinegar and sugar cook another 5 minutes. In a separate pot melt ¼ cup butter. Add sprouts and cook while stirring until golden. Add the water and cook until most of the water evaporates.
