
Cherry Kind Bars
My daughter jumps for joy over Kind Bars! So to save money and make these even healthier, I set out to try to duplicate the taste. You can use roasted raw, sprouted or crispy nuts. I prefer the taste of roasted nuts. Let me know what you think of this recipe.
Ingredients

2/3peanuts

1/3cup dried cherries

1/4cup brown rice crispy cereal(sprouted is best)

1/8teaspoon sea salt (if using unsalted nuts)

1/4cup honey

1/4teaspoon vanilla

2tablespoons heavy cream

1teaspoon butter
Instructions
Preheat oven to 325 degrees Fahrenheit.
Chop nuts so they are small bits. I use a knife because my food processor gets the nuts too fine. Place the nuts in a bowl. Chop the cherries and add them in with the nuts. Add the rice crispy cereal and sea salt to the bowl and mix all the ingredients together. Place honey in a small pan and heat up until a candy thermometer reaches 235 degress Fahrenheit. You can also do the soft ball test if you do not have a thermometer. When the honey reaches the right temperature, take off stove and add vanilla, cream and butter. Pour the honey mixture over the nuts mixture and mix to coat. Press into an 8″ square pan lined with parchment paper. Bake at 350 for 18 minutes. Cook for 20 -30 minutes and then cut into 8 bars.
