Instructions

Saute onions in coconut oil, ghee, or butter for 5 min. add curry, ginger, carrots and sauté another 5 min. Add stock and bring to a boil. Add peas, red pepper, cauliflower and fish and simmer for approx. 10 min. Add coconut milk, lime, salt and pepper and simmer 5 min. more.

I like to serve this soup with rice. I put a scoop of rice in a bowl and then ladle the soup over top and sprinkle with fresh cilantro.
