Cucumber Bites are Topped with a Healthy Egg Salad
1/2cup sour cream
1tablespoon Dijon mustard
1tablespoon white wine vinegar
1/2teaspoon sea salt
A pinchfreshly ground pepper
To hard boil eggs, place them in a pot and pour cold water over them until they are covered. Set pot on stove and turn up heat to high. When the water starts to boil, turn down heat to medium and put timer on for 18 minutes. When done take eggs out of boiling water and run under cold water until cool. Peel off shells and chop into small pieces.
Mix the sour cream, mustard, vinegar, salt and pepper into the chopped eggs and top each cucumber slice with the mixture. Place on a serving dish.
