Instructions

Remove the stalks and seeds from the chilies. In a dry cast iron frying pan add all the spices except turmeric and ginger.  Roast over medium high heat until the spices give off a rich aroma. Stir the spices constantly so they don’t burn. Grind the spices in a coffee grinder or with a mortar and pestle. Add the turmeric and ginger. Keep in an airtight container.
