Instructions

Place all ingredients except the raspberry, nuts, orange  and bowls of toppings in a double boiler on medium heat on your stove. Melt together slowly and stir often. Use a whisk or hand held blender to make it very smooth. Place in three different containers.

Add the raspberry puree to the first container, nuts to the second container and grated orange rind and juice to the third.  Place in fridge for about 2-3 hours.  When the chocolate is firm, shape into small balls by using the palms of your hands. Work quickly or they will start melting.  Roll the raspberry truffles in coconut, the nut ones in crushed nuts and the orange ones in cocoa powder that is sweetened with small amount of whole can sugar.

Place back in refrigerator or in freezer. Serve cool.

If you want to have a hard coating of chocolate on your truffles, follow this recipe and do not roll in the toppings.  When they have been hard-dipped, they can be given as gifts more easily because they don’t need to be refrigerated the whole time.

Other truffle flavor ideas:  ½ tsp. “flower of the Ocean” salt,  chopped up fresh mint, ¼ cup shredded coconut, 1/4 cup chopped dried fruit(like cherries ) and your favorite liqueur.
