Dark Chocolate Truffles
Dark Chocolate Truffles Made with Whole Natural Ingredients
This is the ultimate in decadence! These rich little babies just melt in your mouth and and make your whole body feel luxurious. I like to make these to give to special people on many occasions like Valentine’s Day, Christmas and birthdays…..You can make them in big batches ahead of time, freeze them and when you are ready for a treat or need a great gift, just pull them out of the freezer.
2/3cup cocoa powder
1/2cup of unsalted butter or coconut oil
1/3cup honey or maple syrup
1tablespoon of vanilla
1/8teaspoon sea salt
1/2cup whipping cream
1/2cup bittersweet chocolate chips or cut up a bar)
2tablespoons blended and strained raspberries to one bowl
1/4cup of crushed sprouted or crispy walnuts
2tablespoons freshly squeezed orange juice with a little rind
3 small bowlsone with shredded coconut, one with crushed nuts, one with sweetened cocoa powder
Place all ingredients except the raspberry, nuts, orange and bowls of toppings in a double boiler on medium heat on your stove. Melt together slowly and stir often. Use a whisk or hand held blender to make it very smooth. Place in three different containers.
Add the raspberry puree to the first container, nuts to the second container and grated orange rind and juice to the third. Place in fridge for about 2-3 hours. When the chocolate is firm, shape into small balls by using the palms of your hands. Work quickly or they will start melting. Roll the raspberry truffles in coconut, the nut ones in crushed nuts and the orange ones in cocoa powder that is sweetened with small amount of whole can sugar.
Place back in refrigerator or in freezer. Serve cool.
If you want to have a hard coating of chocolate on your truffles, follow this recipe and do not roll in the toppings. When they have been hard-dipped, they can be given as gifts more easily because they don’t need to be refrigerated the whole time.
Other truffle flavor ideas: ½ tsp. “flower of the Ocean” salt, chopped up fresh mint, ¼ cup shredded coconut, 1/4 cup chopped dried fruit(like cherries ) and your favorite liqueur.
