Honey Balsamic Sauce
You can add this sauce to most meats. I like it with shredded pulled pork or chicken. It adds a beautiful color and the flavor is so intense. I came across this recipe while looking for a home-made pulled pork recipe. A local farmer was selling some pork and I was looking for ways to cook a roast. The recipe originally asked for ketchup but most ketchups are made with high fructose corn syrup so I changed it to tomato paste, added some real chicken broth and adjusted the sweeteners.
1cup balsamic vinegar
1/2cup tomato paste
1tablespoon Worcestershire sauce
2tablespoons Dijon mustard
2cloves garlic, minced
to tastesea salt and pepper
Place all the ingredients in a sauce pan. Bring to a boil and then drop the temperature to a simmer. Simmer uncovered for about 30 minutes. The sauce should start to thicken. Stir occasionally. You can now use this sauce to spoon over or mix into pork, chicken, seafood. This sauce would work well in a crock pot. Just pour sauce over meat slowly cook.
