Instructions

Cover beans and 1 piece of Kombu with simmering water and leave in a warm place for 18-24 hours. Drain and rinse adding more simmering water a couple of times during the soaking process. After soaking, drain and rinse well, then add to a pot with more water bring to simmer and add a new piece of Kombu and optional garlic. Simmer covered, for 4-8 hours. Check occasionally and add more water as necessary. Season to taste. (Don’t add salt till the end or they will get tough skins)
