Pre-heat oven to 400 degrees F

Grate potatoes and place on a cotton dish cloth, they should measure 3 cups of grated potatoes.  Squeeze out the moisture and then place into a medium size bowl. Add the arrowroot powder, onions, garlic, salt and butter. Press this mixture into a pie pan or round 8 inch cake pan. I use the back of a spoon to smooth it out and shape it up the sides of the pan. Bake at 400 degrees for 30 o 40 minutes.

While the crust is baking, you can prepare the filling. In a large bowl mix the egg, cream, dill Dijon, salt and pepper.

When crust is ready, spread out the sauteed leeks and salmon chunks on the bottom. Pour the egg mixture on top and sprinkle with cheese.

Drop oven temperature to 350 degrees F. Put pie in oven and bake for  30 to 40 minutes, until the filling is set and it looks golden on top.
