Nutritious When Prepared Properly

I used to always get “gas” when I ate beans. Now, one of my favorite meals is properly prepared black beans with pre-soaked brown rice, raw cheese, sour cream, salsa and a salad with home-made dressing.

Great care is used to prepare beans and peas in traditional diets that depend on them for nourishment. Beans, lentils, and peas are soaked for long periods before they are cooked. Such care in preparation ensures that they will be thoroughly digestible, and all the nutrients they provide well assimilated because such careful preparation neutralizes phytic acid and enzyme inhibitors and to break down difficult-to-digest complex sugars that are in them. That means no “gas”!
